Ingredients

Scale
  • 2 cups granulated sugar
  • 3/4 cup water
  • 1/2 cup liquid glucose/light corn syrup
  • A few drops black gel food coloring
  • 6 Granny Smith apples (fresh)

Instructions

  1. Prepare your surface by greasing baking paper on a tray and inserting bamboo skewers into each apple.
  2. In a saucepan, combine sugar, water, corn syrup, and black food coloring. Heat until sugar dissolves, then allow to simmer without stirring.
  3. Cook until the mixture reaches hard crack stage (150ºC/310ºF). Test by dropping some into cold water; it should form brittle threads.
  4. Quickly dip each apple in the caramel mixture, swirling to coat evenly. Let excess drip off before placing on the prepared baking sheet.
  5. Allow dipped apples to cool completely before serving.
