  • 1 cup dry green or brown lentils
  • 4 cups vegetable broth
  • 2 carrots, sliced
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 celery stalks, sliced
  • 1 can (14.5 oz) diced tomatoes
  • 4 large potatoes, peeled and chopped
  • 1 cup milk
  • 4 tbsp butter

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté diced onions, sliced carrots, and celery until soft.
  2. Stir in minced garlic for about 1 minute until fragrant.
  3. Add dry lentils, diced tomatoes (with juice), vegetable broth, thyme, and bay leaf; stir well.
  4. Bring to a boil then reduce heat to low and let simmer for 25-30 minutes until lentils are tender.
  5. While the stew simmers, boil salted water in another pot and cook chopped potatoes until tender.
  6. Drain potatoes and mash them with butter, milk, salt, and pepper until creamy.
