  • 1 zucchini, chopped
  • 1 cup broccoli florets
  • 1 tsp olive oil
  • Salt and black pepper to taste
  • 1 avocado
  • 1 cup mixed salad greens
  • 1 tsp everything bagel seasoning

Instructions

  1. Boil the eggs: Place eggs in boiling water for 7 minutes. Cool in an ice bath, then peel and slice in half.
  2. Roast the veggies: Preheat oven to 425°F (220°C). Toss zucchini and broccoli with olive oil, salt, and pepper; roast on a baking sheet for 15-18 minutes until golden.
