  • 2 boneless, skinless chicken breasts
  • 300g Brussels sprouts, halved
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • Juice of lemon
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup milk
  • 2 cloves garlic, minced
  • ½ cup grated Parmesan
  • Salt & pepper to taste

Instructions

  1. Marinate the chicken: Combine olive oil, garlic powder, lemon juice, salt, and pepper in a bowl. Add chicken and coat evenly. Let sit.
  2. Preheat oven to 200C (390F). Toss Brussels sprouts with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 20 minutes until crispy.
  3. Grill the marinated chicken over medium-high heat for 5–6 minutes per side until cooked through. Let rest before slicing.
  4. For the sauce: Melt butter in a saucepan over medium heat. Stir in flour, then gradually whisk in milk until thickened. Add minced garlic and Parmesan; mix until smooth.
  5. Assemble bowls: Layer sliced chicken and roasted sprouts, then drizzle with sauce.
