  • 240ml low-sodium chicken broth
  • 5g salt (plus more to taste)
  • 42g unsalted butter, cubed
  • 5g fresh thyme, chopped
  • Black pepper, to taste

Instructions

  1. Bring chicken broth and salt to a boil in a wide pot.
  2. Add cauliflower florets; cover and steam on low heat for about 20 minutes until fork-tender.
  3. Using a slotted spoon, transfer cooked cauliflower to a food processor.
  4. In the same pot, whisk together butter and 3 tablespoons of hot broth until smooth.
  5. Pour the butter mixture into the food processor along with thyme, pepper, and additional salt if desired.
  6. Blend until completely smooth; adjust texture by adding more warm broth if necessary.
