  • 4 eggs
  • 1 cup diced zucchini
  • 1 cup chopped red bell pepper
  • 1 cup diced onion
  • 2 tablespoons crumbled feta or goat cheese
  • Salt & pepper to taste
  • 1 teaspoon olive oil
  • 1 slice whole grain bread
  • 1 ripe avocado
  • Everything bagel seasoning (or salt, pepper, chili flakes)
  • ½ cup sliced strawberries
  • ½ cup blueberries

Instructions

  1. Preheat the oven to 375°F (190°C). Heat olive oil in a skillet over medium heat and sauté zucchini, onion, and bell pepper for about 3-4 minutes until tender.
  2. In a bowl, whisk together eggs with salt and pepper. Pour the egg mixture over the sautéed veggies in the skillet and sprinkle cheese on top. Bake in the oven for 12-15 minutes until set.
  3. While baking, toast your slice of whole grain bread until golden brown. Mash the ripe avocado in a bowl and spread it evenly on the toast, topping with everything bagel seasoning.
  4. On a plate, serve one slice of frittata alongside half of the avocado toast and add fresh strawberries and blueberries for color.
