  • 1 egg yolk
  • 3/4 cup granulated sugar

  • 3/4 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 1/2 cups icing sugar
  • 5 tablespoons salted butter, softened
  • 1/2 cup buttermilk, softened
  • 1 teaspoon vanilla essence
  • 1 1/4 cups chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. In a mixing bowl, beat together the salted butter and unsalted butter until creamy. Add in the cream cheese and blend until smooth. Incorporate the egg, egg yolk, granulated sugar, and vanilla essence until fully combined.
  3. In another bowl, sift together all-purpose flour, baking powder, baking soda, and salt. Gradually add this mixture into the wet ingredients while mixing continuously.
  4. In a separate bowl, beat together icing sugar with softened salted butter until fluffy. Mix in buttermilk and vanilla essence until smooth.
  5. Pour half of the cake batter into the prepared dish. Layer with pecans evenly over the batter. Pour the gooey filling over this layer gently and top with remaining cake batter.
  6. Bake for about 60 minutes or until golden brown on top and slightly jiggly in the center. Allow to cool slightly before serving.
