  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (14 oz) can full-fat coconut milk
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1/2 cup beef broth
  • 1 tablespoon tomato paste
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • 2 cups all-purpose flour
  • 1/2 cup plain yogurt
  • 1/4 cup warm water
  • 1 teaspoon sugar
  • 1/2 teaspoon baking powder

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Sauté chopped onion until translucent, then add minced garlic and grated ginger.
  2. Stir in curry powder, cumin, turmeric, and optional cayenne pepper; cook for 1 minute.
  3. Add cubed beef stew meat and brown on all sides (5-7 minutes). Pour in beef broth and tomato paste; mix well.
  4. Incorporate coconut milk and drained chickpeas; season with salt and pepper. Bring to a gentle simmer.
  5. Cover partially and let simmer on low heat for 30-40 minutes until beef is tender.
  6. While simmering, prepare the garlic naan dough by mixing flour, yogurt, warm water, sugar, and baking powder; knead until smooth.
  7. Roll out small portions into flatbreads and cook on a preheated skillet for 2-3 minutes on each side until golden brown.
  8. Serve hot with fresh cilantro garnish alongside the garlic naan.
