  • 1 tablespoon curry powder
  • 1 can full-fat coconut milk
  • 1 can chickpeas
  • 1/2 cup beef broth
  • Fresh cilantro for garnish
  • 2 cups all-purpose flour
  • 1/2 cup plain yogurt
  • 1/4 cup warm water
  • 1 teaspoon sugar
  • 1/2 teaspoon baking powder

Instructions

  1. Heat oil in a cast iron skillet over medium heat. Sear the beef until browned on all sides.
  2. Add chopped onion, minced garlic, and ginger; cook until the onion is translucent.
  3. Stir in curry powder, cumin, turmeric, and cayenne pepper; cook for another 2 minutes.
  4. Pour in coconut milk and beef broth; mix well and bring to a gentle simmer.
  5. Add drained chickpeas and season with salt and pepper; cover and simmer for about 30 minutes until beef is tender.
