  • 1 tablespoon vegetable oil
  • 1 onion
  • 3 cloves garlic
  • 1 tablespoon fresh ginger
  • 1 tablespoon curry powder
  • 1 (14 oz) can full-fat coconut milk
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1/2 cup beef broth
  • 1 tablespoon tomato paste
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • 2 cups all-purpose flour
  • 1/2 cup plain yogurt
  • 1/4 cup warm water
  • 1 teaspoon sugar
  • 1/2 teaspoon baking powder

Instructions

  1. Prepare all ingredients: chop onion, mince garlic, grate ginger, and cube beef.
  2. In a large pot, heat oil over medium-high heat. Brown the beef on all sides; set aside.
  3. Sauté onions until soft, then add garlic and ginger until fragrant.
  4. Stir in curry powder, cumin, turmeric, and cayenne (if using) for about 30 seconds.
  5. Return beef to pot; add coconut milk, chickpeas, broth, tomato paste, salt, and pepper. Stir well.
  6. Bring to a gentle boil; reduce heat and simmer for about 30 minutes until beef is tender.
  7. Make garlic naan by mixing flour, yogurt, warm water, sugar, and baking powder in a mixing bowl until a dough forms. Knead briefly then let rest.
  8. Preheat your oven to 450°F (230°C). Roll out portions of dough into flat circles. Bake on a hot baking sheet for about 5-7 minutes until golden brown.
  9. Serve garnished with cilantro alongside warm garlic naan.
