  • 1 tablespoon olive oil
  • 1 small onion
  • 2 cloves garlic
  • 1 ½ cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 large flour tortillas

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned. Drain excess fat if necessary.
  2. Stir in chopped onion and cook for 3 minutes. Add minced garlic and cook for another minute. Mix in chili powder, cumin, paprika, salt, pepper, and tomato sauce; simmer for 3–4 minutes.
  3. Lay tortillas flat and sprinkle a layer of cheddar and Monterey Jack cheese on one half of each tortilla. Spoon the beef mixture over the cheese and top with more cheese. Fold tortillas in half to seal.
  4. Heat a clean skillet over medium heat. Lightly butter or oil the pan and cook each quesadilla for 2–3 minutes per side until golden brown.
