  • 2 chicken breasts, cubed
  • 1 tablespoon Cajun seasoning
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the pasta according to package instructions until al dente; drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add cubed chicken and Cajun seasoning. Cook until browned (5–7 minutes) then remove from skillet.
  4. In the same skillet, sauté onion and red bell pepper until softened (3–4 minutes).
  5. Stir in softened cream cheese until melted; add heavy cream and chicken broth to create a smooth sauce.
  6. Mix in cheddar cheese, Parmesan cheese, paprika, salt, and pepper until creamy.
  7. Return the chicken to the skillet along with the drained pasta; mix well.
  8. Transfer the mixture to a greased baking dish and bake for 20–25 minutes until golden brown.
