  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin pan with paper baking cups.
  2. In a bowl, whisk together the flour, pumpkin spice, baking soda, and salt. Set aside.
  3. In another bowl, mix the pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla until smooth. Gradually incorporate the dry ingredients until just combined.
  4. In a separate bowl, beat the cream cheese with sugar, egg yolk, and vanilla until smooth.
  5. Fill each muffin cup three-quarters full with batter and spoon on the cream cheese mixture. Swirl gently with a toothpick.
