  • 1 lb ground beef
  • 1 small onion, diced
  • 4 garlic cloves, minced
  • 3 cups low-sodium beef broth
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 3 tbsp butter
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large skillet over medium heat, melt 1 tablespoon of butter. Sauté the diced onion for about 3 to 4 minutes until softened.
  2. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
  3. Stir in minced garlic and cook for an additional minute until fragrant.
  4. Add uncooked rice, beef broth, Italian seasoning, salt, and pepper to the skillet. Mix well.
  5. Bring to a boil, then reduce heat to low and cover. Simmer for 18 to 20 minutes until rice absorbs the broth.
  6. Meanwhile, in a small saucepan over low heat, melt remaining butter and combine with milk, cheddar cheese, and Parmesan cheese until creamy.
  7. Pour the cheese sauce into the skillet with the beef and rice mixture, stirring to combine thoroughly.
  8. Cook uncovered for a few additional minutes before serving warm with chopped parsley on top.
